Grading of Mustard Oil in India is regulated by the AGMARK Authority set up by the Union Government.
AGMARK, subject to its very stringent quality regulations, grants its quality certification to manufacturers. AGMARK certification is agricultural commodity equivalent of the ISI standards.
AGMARK has prescribed three Grades namely, Grade-I, Grade-II and Grade-III, for certification of Mustard Oil as per a prescribed set of quality parameters.
Grade-I is superior to Grade-II which is superior to Grade-III in terms of the quality of Mustard Oil.
The primary parameter for grading is the pungency of the oil which is also a quantitative parameter of presence of the essential oil Allyl Isothiocyanate.
Grade-I Mustard Oil must have a pungency of already 25 units which is obtained only in Kacchi Ghani Mustard Oil, the Mustard Oil equivalent of EVOO - Extra Virgin Olive Oil.
Grade-II Mustard Oil should have pungency between 18 and 25 units (not sure of the lower limit).
