Gongura is an excellent source of folate and a very good source of vitamin B6, both of which are needed to maintain low homocysteine levels. Apart from this, it is a rich source of iron, vitamin C, anti-oxidants, calcium, iron, zinc and vitamin A.
The red stemmed variety has a strong sour flavor that intensifies with the heat of summer.
How to use?
Gongura leaves can be consumed raw as a salad, lightly stir-fried, or added to curries, or boiled to have as a beverage. It gives a delicious and tangy taste to both vegetarian and non-vegetarian preparations.
